    Wine with sour cherry is a traditional product of the Abruzzo region, called Ratafia. There are different versions, including fortified ones. This one is made exclusively with Montepulciano d'Abruzzo with some sour cherry syrup. Intense notes of red fruits and cocoa. Elegant, soft and fresh. Served chilled. The preparation and use of Ratafia are part of the centuries-old tradition of farming, handed down from generation to generation. It is traditionally produced by placing, in varying proportions according to the local recipe, whole or pungent sweet cherries and sugar in glass containers exposed to the sun for about 30 days in order to favor fermentation. The product is then added to red wine, left to macerate and stirred daily for at least another 30 days, but it can also reach 5-6 months. The product is then filtered and bottled.

    The wood-aged Vignaquadra is one of the best wines of this dynamic wine company. Only late harvested grapes are used, which give the wine extra concentration and ripeness. Part of the Montepulciano matures in tanks and another part in oak barrels. As a result, the wood ripening in the final assembly is very dosed and the characteristic fruity and spicy flavors from Abruzzo are fully preserved. This is a truly beautiful red wine, which comes into its own best after some aeration. It goes very well with grilled meat or baguette with sausage and cheese. Despite its strength, it is a true four-season wine that – if slightly cooled – is very tasty even on a hot day.

    The successful winemakers of Collefrisio in Abruzzo also offer a beautiful appassimento. The 60% montepulciano and 20% merlot grapes dry on the vine and are only harvested in the second half of October. The ‘normally’ harvested sangiovese adds freshness to the wine and creates a nice balance with the concentrated, dried grapes. Collefrisio’s winemaker Amedeo de Luca dispenses with oak ripening and prefers the concentrated fruit aromas that characterize the appassimento method. The result is a dark-colored red wine that smells beautifully of ripe blackberries and cherries. It also has a great taste thickness with a lot of flexibility.
