    Winemaker Dave Phinney expects to bottle a bit more than 6,000 cases of the 2021 Cabernet Sauvignon Mercury Head, what he calls a “typical volume” for it. Sourced from a couple of well-known valley floor sites and the Stagecoach Vineyard (sometimes a bit of Monte Rosso Vineyard fruit makes it in the blend as well) and aged 13 months in 58% new oak, the nose offers up hints of menthol and cedar over a base of ripe cassis and cherries. It's full-bodied and velvety in the mouth, while a hint of dark chocolate creeps in on the lengthy finish. R2-3

    Traditionally, Palermo included wine that didn’t make it into Mercury Head or Papillon, but winemaker Dave Phinney now buys some fruit specifically targeted for this bottling. The 2021 Cabernet Sauvignon Palermo—a blend of estate-grown and purchased fruit aged 11 months in 34% new oak—includes small proportions of Merlot and Malbec. Offering up cherries, cassis and slightly earthy scents, plus hints of cinnamon and nutmeg on the nose, it’s full-bodied and nicely balanced, with its firmness matched by softness. It’s just a nice drink overall. Best After 2023.

    At first glance, the 2022 Eight Years in the Desert looks to be almost black, but after closer inspection, a dark crimson starts to shine through with a tinge of purple on the rim. The nose is rife with notes of ripe blueberry, black plum, wild raspberry, espresso bean, sweet oak and a hint of crème de menthe and cedar. The entry is akin to walking through a tunnel of velvet walls with blackberry jam, reduced strawberry and a touch of rhubarb. Bright acidity throughout the palate, the wine closes with round, ripe tannins, fresh pluot and dark chocolate.

    The 2022 Mannequin pours a luminous gold core with flecks of emerald, which appear stunning in the glass. Aromatic notes of yellow peach, crème fraiche and graham cracker emanate without much coaxing. On the palate, bright hints of white peach, bosc pear, caramel apple, candied walnut and lemon pith envelop and coat effortlessly. A round finish and supple mouthfeel give way to a touch of toffee at close.
